Preserved Taggiasca olives.

The black, small and sweet olives are a main ingredient of Ligurian cusine and are ideal on a pizza, with meat dishes or simples as an appetiser.

The olives, black and ripe, are harvested in January and February and after a careful selection process are preserved.

They are preserved in a solution of water and sea salt, which conserves the olives. This type of preservation does not involve chemicals or conservation agents.
